The atmosphere is informal and unpretentious—reflecting its roots as a humble food truck—but the quality of the food elevates the experience to something memorable.

The menu centers around iconic Mexican staples. Among the highlights, the Cheese Enchiladas Plate and the trio of tacos—Asada, Al Pastor, and Barbacoa—are exquisite testaments to the balance of seasoned meats, fresh cilantro, and perfectly tender tortillas. The enchiladas offer a comforting, cheesy embrace, though some diners prefer the robust savory punch of the tacos themselves.

Breakfast here is no afterthought. Burritos and tacos filled with classic combinations—Chorizo & Egg, Nopales & Egg, and Bean & Cheese—deliver satisfaction from the first bite. The breakfast plates, featuring options like Carne Guisada, Machacado, and Beef Fajita, showcase a depth of flavor and reflect the rich culinary traditions of Mexican morning fare. Patrons often mention the generous portions and authentic taste reminiscent of home-cooked meals.

What truly sets Taco El Vaquero apart is the passion channeled into every order. Customers repeatedly highlight the consistency of flavor whether it's a breakfast taco or a lunchtime mini taco plate stacked with meat, onions, and cilantro. Just Awesome! I get the bacon, bean and cheese or/and potatoe, chorizo and egg tacos for breakfast (they're big so 2 is good). Try the mini taco plate in Carne asada for the perfect lunch (pastor is good too). 5 street tacos covered in meat, onions and cilantro. Rinse that down with a Mexican coke and your ready for a nap. There is always a line here. It'll be a frozen 32F or a blistering 102F and people will be waiting to get their tacos. That says something about the food coming out of this tiny kitchen.

The carne guisada is perfect!! This is pretty authentic if you ask me. I didn’t get to snap a picture of the tacos but I did snap the enchiladas. The enchiladas are good, but not my favorite. I would settle for the tacos.

I was surprised to find such good food at a mobile food truck. These people certainly know how to cook and the quality of their food reflects in their ratings. I for one will be supporting them anytime. I am out in Marion.

Just tried them for the first time. Beef enchiladas were on point. They have a unique flavor to them that I can’t figure out. Very good. Would recommend.

Holy moly! This place is too good. The red sauce is extraordinary, and the pico is chunky and cilantro generous (oh, joy), and the corn tortillas are thicc!!! I’ve been on a 2X2 bean & cheese and potato & egg kick for a hot minute and I tried one other shop in town - they’re good, but El Vaquero is better. My only problem is that they close at 1:30pm. Quality demands punctuality, I suppose. Don’t expect pictures - I’m too busy eating when I get this hungry!
